Description: WAILEA. Referring to Hawaii's state fish, the unwieldy moniker attached to this restaurant is generally shortened to "Humu." The name, however, isn't the only thing exotic about this restaurant, which is composed of multiple, thatched pavilions drifting in a saltwater lagoon. The atmosphere is unique, and the idea that you can capture your own dinner from the waters beneath is quite remarkable. Much of the cuisine is tinged with tropical accents, whether it's ahi tuna crusted with peppercorns or a sauce laced with the clean flavor of lemongrass. Even the desserts benefit from a regional flair, including coconut ice cream and a banana-chocolate tart. A memorable experience.

Local vegetables also make an appearance, providing a simple counterpoint to the sophisticated entrees. Lamb chops, smoked duck quesadillas, and a well-dressed Greek salad crop up on the menu too, welcoming diners of all tastes and inclinations. Somewhat crowded, but a great destination.

Naturally, great views and affordable prices are a draw, but the food is what really sells the place. A variety of fresh fish is delivered daily; guests can choose to have theirs crusted with parmesan cheese, baked with ginger and orange zest, or broiled with a teriyaki glaze. Seafood Newburg in cream sauce and Shrimp Tahitian, sauteed with wine and butter, are also great options. Steak, chicken, sandwiches, and burgers are available too, depending on the time of day, and you're always free to nurse a cold drink and watch the world go by. If you do, make sure to have a slice of hula pie with its cookie crust and chocolate topping. It doesn't get sweeter than this.

The surroundings aren't elaborate, and there isn't a lot of table space, but for a clientele of surfers and visitors, does it really matter?
